Welp, another unorganized Thursday, another chance to eat on the WSU campus. My first two (yes two) times around at WSU I organized my schedule so I had as little downtime as possible. I never chilled out on campus, and never ate anywhere. I did have Miller Lite (I think?) pounders once with my bro-in-law in the basement of the RSC, but other than that, my exposure was limited.

I remember a LONG time ago (AKA “my first time at WSU”) Blimpie came to campus and I always thought it sounded good, but, like I said I never went. And then when I started working near 29th and Rock I’d go to that Blimpie all the time. Then they closed. And my life got a little less happy. So when Lynds told me Blimpie was, in fact, still on campus, I was ecstatic. I had no idea any buildings other than the RSC had food beyond vending machines. Well, apparently I’ve never been in Hubbard Hall.

Poblano. How do I love thee? Let me count the ways. I love thee to the cheese and tortillas and salsa. Oh the hot salsa. Will you marry me hot salsa? I’ll never want another as long as you are with me always. I freaking love, love, love Poblano.

Everything about this picture is right. Fresh tortilla, melty cheese, fresh veggies. All dipped in the most delicious salsa ever made. If only I knew how to make it….

Anyone who knows me know I love Mexican food. Moreover, I LOVE cheese dip or queso or whatever you want to call that melty, creamy, cheesy goodness Mexican restaurants serve. I may or may not consider myself a connoisseur. But I definitely like all things cheese. So when Jeanette suggested Mexican fair, margaritas included, I was in. Hey, she says you’re either in or you’re in the way. Get outta my way, because I’m in. We finally settled on El Mexico Cafe. I’ve only been once. She’s a virgin. Get ready South Seneca, we’re coming!

Mmmmmm… Fried flour taco with beef y mucho queso? Si, senorita!

I have wanted to eat at Southeast Carryout since I worked near it in 2001. At the time I was still in college/freshly out and didn’t have a lot of extra spending money. And I was eating really healthy. Thanks probably to not having a ton of spending money. But those are days of yon. Now I have spending money, and I seem to spend a lot of it on food and drinks. Ah well. We finally switched locations in 2005, and I hadn’t thought much about it since then. Until I started to compile my “Southeast Wichita Restaurants I Need to Eat” list.
