Do you ever have a craving for a casserole? No? Am I the only one? I know a lot of people associate casseroles with bland, over-made, boring meals. But I like casseroles. Mostly because they make packing lunch easy. When I grill or make a side of meat, I rarely want to eat it the next day. And lots of other foods seem to not taste as good the next day. Soups and casseroles, on the other hand, warm up well, are easy to take to work, and if you season them well enough, aren’t bland or boring!

Disclaimer: I think most casseroles, when made as the recipe describes, are pretty boring. Why is that? That’s like how most crockpot dishes rely on cream of something soup. Weird.

Yes, you do see cheese. And macaroni, black olives, beans, tomatoes and ground beef. Enticed?

Felipe’s is hardly a new or unknown spot in Wichita. And I already talked about it in my west Wichita patio review, but a few Sundays ago I had a particularly moving experience at Felipe’s. It was a “morning after” and I was having a vicious craving for Mexican food and caffeine. And I ended up at Felipe’s.

At this rate, tomorrow will be a “morning after,” too…

Poblano. How do I love thee? Let me count the ways. I love thee to the cheese and tortillas and salsa. Oh the hot salsa. Will you marry me hot salsa? I’ll never want another as long as you are with me always. I freaking love, love, love Poblano.

Everything about this picture is right. Fresh tortilla, melty cheese, fresh veggies. All dipped in the most delicious salsa ever made. If only I knew how to make it….

This post is about nachos. And only about nachos. Be forewarned. I’ll make it short and sweet. If you want to get delicious nachos on the cheap, anytime of day, go to Alejandro’s. Most of those 24-hour fast food Mexican places like Rene’s, Mexican Burrito, etc. don’t have cheese dip. And the chain fast food Mexican places like Taco Bell, Taco Pronto, Taco Bueno, etc. don’t have very good nachos. But Alejandro’s not only has 24 hour at your beck and call nacho service, but they’re delicious. And you can get a gigantic serving for $3.

Yes. Go.

I like my Mexican food like I like my hookers, fast and cheap. Too far? OK, I’ve never done anything with a prosty. And I guess at least they’re earning a living. But, what I DO like and DO have a lot of experience with is Mexican food. I’d eat it every freaking day if 1. I didn’t swear it off every time I ate it because I over-eat and 2. I wouldn’t get as fat as Gilbert Grape’s mom. Too far again? I can’t ever tell. I mean, come on, the poor woman was fat enough they had to put reinforcements in the basement to hold her and burn the house down after she died. Sad? Yes. But do I want to be her? No. So I try to limit my Mexican intake. Both food and boys. OK. That was tacky.

I like my salsa like I like my boys: Hot and spicy. Aye! Aye! Aye!

Anyone who knows me know I love Mexican food. Moreover, I LOVE cheese dip or queso or whatever you want to call that melty, creamy, cheesy goodness Mexican restaurants serve. I may or may not consider myself a connoisseur. But I definitely like all things cheese. So when Jeanette suggested Mexican fair, margaritas included, I was in. Hey, she says you’re either in or you’re in the way. Get outta my way, because I’m in. We finally settled on El Mexico Cafe. I’ve only been once. She’s a virgin. Get ready South Seneca, we’re coming!

Mmmmmm… Fried flour taco with beef y mucho queso? Si, senorita!

When I saw where La Posada was on the map and did a “street view,” I immediately remembered passing it when there was a lot of construction on Kellogg and I got off at Oliver. So I was excited to try it out. I sent my sister, Karla, a text and she said she’d seen it several times, too, and wanted to try it. Booyah! Bring on the Mexican food! Arriba!
